As Promised!

Phew, it has taken me a very long time to get back to this blog. I have had such a busy summer. We have tons of work to do to the house and everyday I feel like I am just a little crazy for trying to tackle it and all I do is play catch up. Life is good we have gotten much accomplished and I am excited to show everyone pictures of some of the changes we have made to our little house. Before I left I promised to share some news and then left it hanging (although I suspect most of my viewers already know). So are you ready...


BABY THREE is on the way!

I am a little slow in sharing but I am getting ready to enter the third trimester here soon and the time is going by so fast. We hid it for a long time because it was so soon after baby girl was born and I really wanted to feel like I was still not pregnant for a little while. Lucky for me I show a little slowly. We did go ahead and find out what we were having this time because we felt we needed to and it is a GIRL again and I think it will be so fun for them because they will be a year apart. Irish twins I guess. We still need to pick out a name but we are feeling ready and excited.

This Past Spring

Now that it is Summer I thought I would get some of my favorite pictures from spring up to share with you. As always summer brings busy times for me with all of the projects, gardening and two kids that are around here.



 This little sweetie just loves her daddy. She always has a smile for him and is currently practicing saying Da Da Da. He makes her laugh and I can tell they are going to have a special relationship.



 We got Chicks back in March and they were really fun to have and watch grow up. Big brother just thought they were so much fun and was always trying to grab them and get them all excited.




I thought the chicks were pretty neat too. I have wanted to get some for a really long time and we kind of bought them on a whim. It wasn't really in the plan for the year but it was a fun impulse buy. Later this summer I plan on posting about our garden and I am planning on including pictures of the chicken coop that hubby built for our little ladies.


 Grandma came for Easter and it was really exciting to have her around. Let me tell you she was really good at just reaching into our roosting box and grabbing chicks for the little mister to hold.




And of course it wouldn't have been springtime with out some rainboots and some puddle stomping. Of course he just prefered to create is own puddles with the garden sprinkler. That was fine with me because I didn't really want to take him out in the actual rain anyway.


We are getting ready to go on a big trip so I wont be posting for a little while but when I get back I am hoping to share some fun stories and some big news! Have a Happy 4th of July!

Pictures of Everyday Life

 I just wanted to post a few pictures of my two cuties. Everyday I think about how lucky we are to have two healthy super cute kiddos. It is amazing how they can make me so frustrated and upset and then all I have to do is look at them and my heart instantly melts and I am no longer mad.  This phenomenon is a wonderful  tender mercy, especially after a long night of crying from baby girl or a long day of tempter tantrums from big brother. Being a mother has taught me a lot about forgiveness and love and sacrifice. I sure love my little peanut and my big coconut... that's what I call them for fun.

The last snow storm.

We are long past this and now running our air conditioner on certain days but these pictures were just too fun not to share with you.



 On the last snow storm our little boy and his daddy went out to make a snowman.


 They worked so hard and it was really fun. The snow was nice and wet, perfect for building with.


 I stayed inside with a cranky baby girl. Next year we will join in the fun I promise.

My Birthday...

My birthday came and went. It was at the beginning of March but I still wanted to give my dear Hubby credit for the wonderful job he did making it special. These are my lovely roses that he got me.


 Since my birthday was on Sunday we did most of our celebrating on Saturday. We got dinner out and he decorated the house while I went shopping for about an hour. We saved my cake for Sunday. The best part is that I told him that what I wanted for my Birthday was to have some money to go to the Garden Expo that is the second weekend of May. I am still looking forward to it, it is my favorite event of the year here.

Quinoa Fruit Salad

Ive decided to start posting recipes I make up so that I can pin them on Pinterest and have a online recipe book of sorts instead of a million random pages of handwritten recipes floating around. I made this salad just a few minutes ago and it was better than I expected. I have been watching Chef Brad on BYU TV and thought I would play around with food the way he does. It is really healthy and like I said surprisingly tasty too.


          Ingredients:
2 cups cooked quinoa
1.5 cups brown rice
1 can 20 oz no sugar added pineapple chunks, fluid reserved
1 apple cubed
1 pear cubed
1 cup chopped parsley
1 handful craisins or other small dried fruit (for color and texture)
 bananas chopped
unsweetened shredded coconut

        for the dressing:
the reserved liquid from canned pinapple
1 cup coconut milk
1/3 cup agave nectar
1 tsp cinnamon
2 tablespoons oil, (I used Barleans Flax oil, but olive could work too)

In a large bowl combine the quinoa, brown rice, drained pineapple, apple, pear and parsley.

In a blender or a bowl with a whisk combine the pineapple juice, coconut milk, agave, oil and cinnamon. Blend up well and pour over the combined salad ingredients.

To serve add sliced banana and shredded coconut into each serving and enjoy!

If you are not familiar with quinoa you cook it just like rice, 2 cups water to 1 cup rice. I added some coconut oil and salt to mine before bringing it to a boil. Bring to a boil, cover and turn down to low and simmer until all the water is adsorbed, its about 10-15 minutes.

I used the brown rice because we already had some in our refrigerator but you can feel free to experiment with any other precooked grain or white bean.




 On a different note I know that most of you look at my blog to see pictures of the kiddos. They are really good to each other. J likes to help out (that's normal for him). R likes to watch her big bro.
These pictures are really funny because several times J has asked to feed R. I finally let him try because I thought it might solve his interest when he found out it didn't work for him.


You can see how much she liked it. And look at his face... to cute.
